The Bikini Cocktail
Yields 10 people
Ingredients for the Clementine Syrup (makes 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g fine sugar
To make the Drink (yields 850ml, to serve 10)
400ml decent vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
Fresh cranberries, as a garnish
Mandarin essential oil, as a final touch
Instructions
To prepare the Syrup: Put all the items in a pan, heat until it reaches a light boil, mixing to dissolve. After that, take off the heat and leave to reach room temperature completely. Transfer into an sterilised bottle, cap it and store in the refrigerator, where it will keep for up to one month.
For the Premix: Pour all the liquids into one large bottle, let it rest for 60 minutes, then filter it preferably using muslin, so it's completely strained.
For serving: Measure 85ml from the premix into your stirring glass filled with ice, and stir carefully for a minute to cool it down. Strain into a chilled martini glass or similar, decorate with a few cranberries and complete it using a quick spritz with the mandarin essence above the glass.
